lunch_box11We’ve had melted cheese for dinner four out of five nights since Friday. We know it’s wrong. But you see, we live 45 minutes from a good market and have been busy, lazy and a little bit grumpy of late. It just seemed easier to get some Oaxaca nice and viscous inside a flour tortilla than to actually prepare a wholesome meal. And I did make delicious pizza from scratch using Mark Bittman’s dough recipe over the weekend. Red pepper, onion, garlic, mushrooms, sauce. And oh, there was cheese. Parmesan and ricotta and high mozz and low mozz. Epic.

The dairy deluge ends here. Because we are grown-ups when we slide back into bad habits there is no parental figure but your own atrophied conscience to help you make the right decision, to put down the bag of shredded cheddar and step away from the microwave. With few fresh options I went to the freezer where I sourced bags of peas and spinach. I had an old onion and some garlic on hand. Aha! I popped it all in a pot coated with olive oil then covered the veggies with a couple of cups of broth. I cooked it up for a few minutes, let it cool, blended, returned to stove and let simmer on super low.

This soup is filling, sweet and scrumptious. Now we can have cannelloni without guilt for supper!
