Ungh: Peanut Butter Buckeyes

buckeyes

This recipe for chocolate-dipped peanut butter balls (or “buckeyes,” I guess, if you live in Ohio) makes me wish that I weren’t a total failure at candymaking. I can just imagine the flavor combination of peanut butter and powdered sugar, which is a taste I don’t think I have experienced since I was a little kid…what, was that a much more popular technique in the early 80s?

That looks like too much work! Drop paper muffin/cupcake liners in a pan. Now melt some chocolate chips with a little butter. Put a spoonful into each liner. Put in the freezer. Now melt some peanut butter. Put that on top of the chocolate. Back into the freezer. Melt more chocolate and butter. Put it on top of the peanut butter. Freeze. Store in the fridge. I don’t measure anything, just melt the ingredients in the microwave, assemble and freeze.
