Good Morning, Muffin

I had an insanely productive morning. I walked on the beach, practiced Nia for an hour, read People of the Book for my book club and made these incredible muffins. Baking from scratch is totally blowing my mind. Tonight I’m roasting a chicken for dinner, to be served with my no knead dutch oven (rosemary) bread. I am such an sensational homemaker.

Baking from scratch is amazing. Hard to find the time when there are two ankle-biters who want to “help” (read: have flour fights) but I love it. The only trouble is that when there’s freshly baked goods sitting on my counter, it’s all I can do not to inhale them in one fell swoop. Just working on my winter padding, I guess.
Baking is still such a novelty and safe because I would rather eat a giant ball of mozzarella than a cookie (most days).
