Ungh: Coconut Chicken with Sweet Chili Dipping Sauce

Once a year or so, I go through this bizarre, inexplicable phase wherein I can’t tolerate the thought of eating shrimp. It’s brought on by nothing at all in particular, but sure enough, offer me shrimp at the wrong time of year, and I’ll get weirdly upset. The rest of the year, I’ll pile it down my throat like a marauding pirate.

Though I am in a decidedly “pro-shrimp” place right this minute, I am saving this recipe for later, when the tide turns. Beth at Budget Bytes managed to cook up a coconut chicken and panko breadcrumb recipe that, unlike the shrimp version of this dish, doesn’t look like it overpowers you with coconut flavor. It not only looks stunning, but is a real bargain, to boot, at only around a dollar per serving.
